Vanilla Scallop with Cayenne and Lemongrass

As I recently mentioned, I've been working my way through the Food Flavor Bible and thought it would be fun and interesting to try to mix some of the flavours that go well with scallops. So I put together a scallop with vanilla butter, dusted with cayenne pepper, and topped with fragrant lemongrass. I really liked it.

Transient

What you'll need is:

  • 4 fresh scallops
  • 1 lemongrass stalk
  • 2 tbsp butter
  • 1 vanilla pod
  • pinch ground cayenne pepper

Put the soft butter in a dish with the contents of the scraped vanilla pod and mash together until uniform. Heat the butter into a hot steel frying pan and once it starts to bubble place the scallops in the pan. As you cook each side for about 3 minutes, or until opaque, dust each side with cayenne pepper.

Top with grated lemongrass and serve! What flavours can you combine that are new and interesting?
