Something Simple - Delicious Chili

So, the Gourmet Male and Gourmet Female have been distracted by a 72 hour drama with our little girl puppy. As a result we wanted to cook something simple but tasty for dinner tonight. Back when I lived in the States I would pop down to Wendy's to grab a $1 bowl of chili - it was fantastic. So about six years ago I went on a mission to recreate it. Since then the recipe has changed a bit but it still holds true to the original recipe and it is damn tasty.

1/2 celery, chopped
2 tomatoes, roughly chopped
2 onion, diced
1 green chili, chopped
1 kg beef mince
Large tin kidney beans
Small tin cannellini beans
500 gram tomato paste
2 cloves garlic, minced
1 tbsp cumin
1 tbsp pepper
1 pinch of salt
1 tsp cayenne powder
1 small tin water

Briefly sweat the onions and garlic in a pan with a tablespoon of olive oil. Then brown the mince.

Add all the remaining ingredients and give a good stir. Simmer for two hours, stirring every twenty minutes or so. Take off the heat and let it settle for twenty minutes before serving. Add a little Cholula if you want a little hot sauce kick.

Now, the Gourmet Female prefers to cook this in stages but I am a firm believer of cooking it in one go. The flavours meld on their own.
