Bacon and 'Eggs' (with scallop)

New Year's Eve just passed here and I took the opportunity to create a bit of a feast for a few friends. It's turning into a bit of a tradition as everyone is having kids and big parties are a thing of the past. But hey, any excuse to cook and create new dishes! Here's the menu from the night...

I started the meal with a quick bite of scallop with truffle oil, pancetta, and salmon caviar. I call it Bacon and 'Eggs' with scallop.

It's a pretty simple dish to make. You'll need:

  • 4 scallops
  • 10g salmon caviar
  • 1 pancetta round
  • black truffle oil

Preheat the oven to 170C. Put the pancetta round on a baking tray and once the oven has reached its temperature place in the oven for 12 minutes, or until fully crisp. Once the pancetta has cooled bash into little chips in a mortar and pestle.

Sear the scallop in a stainless steel frying pan in clarified butter. The time depends on the size of the scallop but generally a couple minutes on each side. Once the scallop is just translucent remove from the pan.

Serve the scallop in a bite spoon with a couple drops of truffle oil, a sprinkle of pancetta, and a teaspoon of caviar. Let your guests be amazed!
